About Bianka
Some women fill a room by walking into it. Bianka fills it by sitting down. Put her at 165 cm, curvy, long light brown hair with ends the summer has left several shades lighter than the roots, and hazel eyes that read green under a warm bulb and amber under a cold one. She favours softer tailoring than the square mile usually sees, a wrap dress, a low heel she can genuinely walk in, and she never once looks as if she is enduring her own outfit.
The temperament is unhurried, which is the rarest commodity within a mile of the Bank junction. At 23 she listens the way older people do: no interrupting, no waiting with her own story loaded. In English she is warm and unhurried, and she repeats a name back once so that she never loses it. Food is the genuine enthusiasm. An evening with Bianka
The pattern rarely changes because it works. A drink first, twenty minutes, somewhere with chairs you can sit back in, while she asks what your day actually contained. Then the short walk to the table she has already checked on, and an order she assembles out loud with the waiter, asking one question about the fish that turns out to be the right question. She eats properly and she is not shy about it. Conversation drifts from a market stall she rates to something you have been carrying around since Monday, and she does not flinch when the second one arrives. Dessert is shared or skipped without negotiation. On the way back she will stop under the dome for a moment, because after two years in this city it still does something to her, and then the evening goes wherever you have agreed it goes.

Always. A kitchen shows its hand in the small plates, and I would rather taste twice than fill up once.
Do you mind the City on a quiet Sunday?
I prefer it. Half a million people leave on Friday and the streets become a village with very large buildings in it.
How far ahead should I ask?
The same day is often fine before about four in the afternoon. For a Friday table, two days is kinder to everyone.
