An evening with Michelle
Seven o'clock, Water Street, and she is already at the bar at the front with two drinks ordered because the table will be four minutes late and she has decided not to mind. The room is loud in the best way, high ceilings, fans turning, a queue starting behind you that you have avoided by being on time. She takes the menu and builds an order out loud, asks one question about your appetite and ignores the answer, and about six dishes arrive in an order she has clearly planned. At a table of four or six she is excellent, keeping the quiet one in the conversation without anybody noticing. After, the dockside walk east is eight minutes of complete silence after all that noise, and it works every time.
